The horse mackerel, a small silver fish with lemon yellow fins, is a real treasure of the Black Sea and specialty food of the local restaurants. The red mullet or ‘sultanka’ received its exotic name thanks to one Turkish sultan, who loved to treat himself to different dishes of red mullet.
